Millet Burgers – Serves 6 | LUNCH

Ingredients:

  • 1/2 cup millet
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cups greens (spinach, arugula, or kale)
  • 2 stalks celery
  • 2 carrots
  • 2 cloves garlic
  • 2 tsp salt
  • 1 tbsp cumin
  • 1/2 tsp chili powder
  • 1/2 cups flour (can use any flour, including gluten free)

Directions:

Cook millet in two cups of water and let cool. Finely chop greens, celery, onion, carrots, and garlic and sauté in olive oil. Combine all ingredients in a mixing bowl. Scoop mixture onto a baking sheet lined with baking paper to make six patties. Bake in a preheated 400 degree oven for 20 minutes, carefully flipping the burgers after 10 minutes.
