Purple Cabbage Salad – Serves 6

Ingredients:

  • 1 bag shredded red cabbage
  • 2 stalks celery, with or without leaves, thinly sliced
  • 1 large carrot, shredded
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 3 tbsp toasted sesame seeds
  • 2 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp reduced sodium soy sauce
  • Sweetener of choice equal to two tablespoons sugar
  • 1/4 tsp dry mustard

Directions:

Toss all ingredients to coat. Let salad sit for 20-30 minutes to let flavors blend and toss again before serving.
