Quinoa Pilaf – Serves 4 | DINNER

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 carrot
  • 1 medium onion
  • 2 tsp olive oil
  • 1 tsp salt
  • Pinch of pepper
  • 1/2 cup chopped parsley
  • 1/4 cup walnut pieces

Directions:

Chop the carrot and onions and sauté in olive oil until the onions are clear and the carrots start to soften. Add quinoa, water, salt, and pepper. Bring to a boil, then let simmer until the water is absorbed, about 20 minutes. Fluff with a fork and let cook slightly. Add chopped parsley and walnuts and fluff again. Serve hot, warm, or cold.
